Foolproof Hummus

Hummus is another basic recipe that’s great for entertaining or to have a snack. This one only recently made it into my repertoire because all the other recipes I tried weren’t that great. I never got the ratio of ingredients right and it was always too garlicky or too lemony. This is a chunkier version that I like more than the store-bought kind, but if you like it smoother, add some of the chickpea water until it is the texture you’re looking for.

2 x15 ounce cans of chickpeas

½ cup of olive oil

juice of 2 lemons or limes

3 tablespoons of tahini

3 peeled garlics cloves

½ teaspoon of paprika

salt & pepper to taste

 

Place all ingredients in a food processor or blender until smooth.
